These oats can easily be made in just minutes the night before, giving you a sweet and nutty flavor as soon as you wake up! They're perfect for those who love dessert for breakfast, and who doesn't?
Let's talk about overnight oats. They're perfect for busy or lazy people as they take less than 5 minutes to prepare the night before. The best part is, you can just wake up, add your favorite toppings, and indulge! Plus, they're creamy and delicious thanks to the banana flavor.
And did I mention the caramel sauce? It is rich, creamy, and vegan, gluten-free, and dairy-free. Plus, it can be stored in the fridge for up to two weeks, giving you endless opportunities to add some sweetness to your life! The sauce takes about 40 minutes to make, so make sure to start cooking it low and slow for that perfect thick and creamy texture.
Not a fan of caramel? No problem! Silk has a great range of almond creamers, including vanilla and hazelnut flavors. They also just launched their Sweet & Creamy Almond Creamer that has a great nutty flavor and added sweetness.
The best part about overnight oats is that there's absolutely no cooking involved. You can simply mix all your ingredients the night before, and wake up to a delicious breakfast. Just remember that anything you add to these oats will become absorbed overnight, so if you like a good crunch, you'll want to wait and mix those in right before eating. Some of my favorite toppings include cacao nibs, chopped cashews, banana slices, and, of course, a drizzle of delicious caramel sauce!
These overnight oats with homemade caramel sauce are dairy-free, refined-sugar-free, and vegan. They're made with all clean and wholesome ingredients that are sure to give you the perfect start to your day. You can easily grab them and go, which is perfect for busy people. You can even turn them into a dessert and indulge yourself in something sweet and healthy at the same time. So, without further ado, check out the recipe below!

Combine all ingredients (except for toppings) mixing well, cover tightly with a lid or plastic wrap, and refrigerate overnight.
To make the caramel sauce, combine coconut milk, coconut sugar, and sea salt in a small saucepan and bring to a boil over medium-high heat. Once it starts to boil, reduce the heat and let the sauce simmer for about 40 minutes, stirring occasionally. (You may want to stir the sauce more frequently in the last 5 minutes to avoid the bottom from burning)
Remove caramel sauce from heat and mix in the vanilla extract. The sauce will thicken as it cools.
Spoon a tablespoon or two over top of the oats and store the leftover caramel sauce in a sealed airtight container in the fridge.
Top the overnight oats with cacao nibs, chopped nuts, and banana slices if desired. Enjoy!
