Since my daughter started eating solid foods, watching her enjoy new, unfamiliar tastes, textures, and varieties of fruits and veggies has been a fun adventure. I'll confess I struggled with baby-led weaning, so I got creative with the food I prepared for her. These cheesy broccoli quinoa bites were a hit with her, not only because she could gobble them up, but they were also the perfect size for her tiny hands. The quinoa crumbled really quickly in her mouth, so I'm not worried about her choking.

Wondering how to replicate this delicious meal? These bite-sized savory treats are super easy to make. They only require 5 simple ingredients! These goodies are packed full of protein and veggies which can be shared with your kids. I promise that making these with your kids will be great fun!

INGREDIENTS YOU’LL NEED:

  • Cooked quinoa: I love making a large batch of this in my Instant Pot to use throughout the week. I highly recommend using chicken or vegetable broth to cook the quinoa rather than water, as this gives it more flavor!
  • Eggs: Eggs are essential to bind everything. These bites crumble easily for my infant, but feel free to add an additional egg if you'd like them held together more.
  • Broccoli: I prefer using fresh broccoli, which I finely chop in a food processor. However, frozen broccoli rice will also work just fine!
  • Carrot: I like sneaking in an additional veggie with the broccoli. Grated carrot looks just like cheddar cheese, so your kiddos will never know they're eating a vegetable!
  • Cheese: I used shredded cheddar cheese in these bites, but feel free to use any cheese you'd like.

It's worth noting that I did not add any salt, pepper, or seasonings to this recipe. These veggie bites were created for little tummies. However, if you're making them for older children (or even adults!), feel free to add whatever you'd like. You could also make larger muffins for those bigger appetites!

These cheesy broccoli quinoa bites freeze really well, too! The recipe makes a ton (about 30) and there's no way my 9-month-old could eat all of them in a week. Freezing them makes it very convenient to have meals prepped for her. Place them in a sealed container or ziplock bag, and they can be kept in your freezer for up to 3 months!

And for your older kids, these quinoa bites are perfect for their lunch box or as an after-school snack! Feel free to use other veggies like cauliflower, bell pepper, or zucchini. You could even toss in fresh herbs, garlic, and other seasonings, as I stated prior. These are really so simple to throw together and make child-feeding fun again!

Ingredients

  • 2 cups cooked quinoa

  • 2 eggs

  • 1 cup shredded cheddar cheese

  • 1/2 cup grated carrot

  • 1 1/2 cups chopped broccoli

Instructions

  1. Preheat oven to 350 degrees F.

  2. In a food processor, blend together broccoli and grated carrot until finely chopped.

  3. Mix together chopped veggies, cooked quinoa, eggs, and shredded cheese in a large bowl. Divide quinoa mixture evenly into two mini muffin tins sprayed with cooking spray, pressing down each one so that the bites hold together.

  4. Bake quinoa bites for 15 to 20 minutes, or until lightly browned. Let cool for 5 minutes before serving and enjoy!
